EDDIE RITTER

Hi everyone! My name is Eddie and I live in Ramona, CA with my wife and three kids. I'm actually an architect by trade but I'm a huge foodie that loves to cook. It's honestly just come from 15+ years of practicing and learning through trial and error. I learned a lot of foundational cooking methods from watching and copying Food Network chefs back in the day. Emeril, Alton Brown, and Bobby Flay were my top 3. I watched them all through high school and college, and just started practicing. Over the years, I've taken a lot of those foundational methods and built on them.

If there's one thing I'd say I specialize in, it would be custards. Flan, creme brulee, ice cream, chocolate cream pie, creme anglaise, etc., they're all custard based recipes that I've spent years learning. And the thing with custards is they're so easy to screw up. I remember being a kid and wanting to learn how to make a simple custard dessert and not understanding any part of the recipe. Fast forward some to my adult years and I ruined so many creme brulees and flans. They'd either turn out curdled or wouldn't set up right. I share this because, looking back to where I was then as compared to now, it's something I'm actually very proud of myself for.

I've been keeping recipes in digital form on my Dropbox for years, adding more and more over the years. I figured I'd start moving them over to somewhere I could share some. And I like experimenting too. I figured this blog could be a place where I could share some of the successes. Enjoy, and feel free to reach out to me with any questions.
